Coffee Recipe #2 : filter kaapi

filter kaapi is the norm at home. i have woken up all of my childhood to the strong aroma of “decoction”. coffee has been staple at home. coffee meant the ones you get at the roasteries that burn beans until there’s nothing left except black and oil.
the brass south indian filter kaapi decoction is still at home, though i use it quite rarely now.
even as a child though, i preferred to have it black because if i was going to have proper south indian filter kaapi i want it to be perfect.

the right, intense strength, the slightly extra sugar that hits the spot and thicky cream milk – none of the skim, 2% stuff. i very rarely get this perfect cup – even if i make it myself.

having mostly had black coffee and then shifted to specialty coffee, i missed having the filter kaapi. and these are my laughable but humble efforts to get back on track.
